Peri-Peri Fish Taco Bowl

WHAT YOU’LL NEED:

  • Costco frozen wild Alaskan cod (170g)

  • Romaine Lettuce

  • Tomato

  • Cabbage mix

  • Avocado (50g)

  • Corn tortilla chips (38g)

  • SAUCE: Greek yogurt (40g), light mayo (25g), Nando’s Peri Peri sauce (15g), lemon juice

HOW TO:

  1. Defrost your fish. Pat dry and spice with cayenne pepper, onion powder, garlic powder, and black pepper.

  2. Air fry your cod at 375F for 8 min on each side.

  3. Wash and chop all vegetables. Set aside.

  4. Combine yogurt, light mayo, and Nando’s in a small bowl as the sauce. If too thick, add more Nandos and/or lemon juice.

  5. Assemble your bowl. Lettuce goes on the bottom, then tomato, cabbage, and avocado on top. Add the fish last before dressing with sauce.

  6. Remember your chips! Chips are great for scooping up bites.

BONUS TIPS

  • Frozen cod can be subbed for fresh cod.

  • Any brand of tortilla chips will work. I used Siete because I love how clean they are.

  • Nandos Peri-Peri is the best tasting in my opinion. However, other sauces can be used instead. I recommend sticking with something light, thin, and spicy.
