Honey Balsamic Sweet Potato Plate

WHAT YOU’LL NEED:

  • 93/7 lean ground beef (180g raw)

  • Sweet Potato (280g raw or 1 medium potato)

  • Mushrooms

  • Fat free feta (25g)

  • Avocado (40g)

  • Mixed greens

  • Cucumber

  • Cherub tomatoes

  • Balsamic Vinegar

  • Dijon mustard

  • Honey (10g)

HOW TO:

  1. Spice ground beef with garlic powder, onion powder, thyme, oregano, and a touch of cayenne pepper. On medium heat, cook your ground beef.

  2. Wash and cut your mushrooms. Add them in while the ground beef is still cooking.

  3. Once your ground beef is a nice golden brown, remove from heat.

  4. Wash and cut all your veggies. Dice your avocado.

  5. FOR THE SAUCE: combine your honey with about a 2 tablespoons of balsamic vinegar and a teaspoon of dijon mustard.

  6. Poke holes in your sweet potato (and give it a good wash). Wrap in WET paper towels and microwave for 7-9 minutes.

  7. Remove sweet potato from microwave and let cool for 1-2 minutes. Slice in half and add all your toppings (beef, veggies, avocado, and feta). Finish with sauce.

  8. Before you dig in, take a picture and share it with me!

BONUS TIPS

  • I would not recommend swapping sweet potato for regular potato. The ground beef, mustard, balsamic, and feta all work best with specifically sweet potato.

  • If you don’t want to use a microwave, I am sure you can boil your sweet potato. The whole point is just to get the inside nice and soft.
