Protein Pancakes

WHAT YOU’LL NEED:
Fat-free cottage cheese (75g)
Whole egg
Oats (30g)
Protein powder (20g)
Baking powder (2.5g)
ON THE SIDE: Greek yogurt (100g), strawberries, SF syrup
HOW TO:
In a blender, blend together your cottage cheese, egg, oats, protein powder, and baking powder until you have obtained a batter-like consistency. If it’s too thick, add a splash of liquid (either milk or water).
Wash and cut your strawberries. Set aside.
Heat a pan on medium heat. Make sure to use a nonstick pan or nonstick spray. Add your batter to the pan in quantities that will form pancakes the size you prefer.
When your batter starts to form bubbles along the top, flip over. This process usually takes around 2-4 minutes depending on the thickness of the pancake.
After another 2-4 minutes, dish up your pancakes! Add strawberries, yogurt, and SF syrup for the perfect sweet breakfast!

BONUS TIPS
You can use any flavor and brand of protein powder. Personally, I love using PE Science! Vanilla, snickerdoodle, or peanut butter cookie are my favorite flavors. :)
Greek yogurt is an optional topping, but it does add a very nice touch to the recipe. Boosts the protein and reminds me of whipped cream/frosting.
