High Protein Alfredo
MACROS (without extra protein)

WHAT YOU’LL NEED:
Pasta of choice (4oz)
Fat free cottage cheese (140g)
Parmesan cheese (30g)
Garlic powder, onion powder, parsley, sea salt, and black pepper
OPTIONAL: shrimp, chicken breast, or other protein of choice
OPTIONAL: mushrooms and/or broccoli
HOW TO:
Boil water on the stove for the pasta to be cooked in. Weigh out your pasta and add the the water once boiling. Boil for about 8-11 minutes depending on your desired texture.
Once the pasta has finished cooking, drain it and SAVE SOME PASTA WATER.
Add your cottage cheese, parmesan, and 2/3 cup of pasta water to a blender. This is a good time to also add in your garlic powder, onion powder, parsley, sea salt, and a tad of black pepper. There are no specific measurements for these; just eyeball it.
Blend until smooth.
In a pot, add your pasta and sauce. Make sure the heat is OFF. After everything is mixed well, you can slowly reheat your pasta on LOW to avoid the cottage cheese curdling.
If adding extra protein, make sure you have already cooked your protein separately. Now is a good time to add it into your pasta.
If adding in any sort of vegetable, make sure your vegetable has been properly steamed before adding it into your pasta.

BONUS TIPS
Any pasta shape works for this dish. I like using longer, noodle-ish shapes to give it that true alfredo vibe.
When making your alfredo sauce, add in the pasta water while it’s still hot. This will help make sure the cottage cheese does not curdle later on.
